Chili Oil

Ingredients

Canola Oil - 1 Cup

Sesame Oil - 1 ounce

Orange Peel - 2

Red Pepper Flakes - ¼ cup

Fermented Black Beans - 2 Tablespoons

Garlic Clove – 1

 

Instructions

  1. Place canola oil, garlic, red pepper flakes, orange peel, black beans in pan.
  2. Heat oil to 200F
  3. Remove from heat and allow to stand for 24 hours. Strain through cheese cloth.

Herb-Infused Olive Oil

Ingredients

Extra Virgin Olive Oil – 1 Cup

Fresh Tarragon – 1 sprig

Fresh Thyme – 1 sprig

Fresh Rosemary – 1 Sprig

Lemon Zest – ½ Lemon

Garlic Clove – 1

 

Instructions

  1. Warm Oil in Sauce Pan
  2. Pour oil over herbs, garlic and lemon zest
  3. Refrigerate for 24 hours
  4. Make up bottles with garnish, strain oil and pour into bottles.
  5. Keep refrigerated.

Scallion-Ginger Oil

Ingredients

Grapeseed Oil – 1 Cup

Fresh Scallions – 3

Fresh Ginger – 1-two inch piece, peeled and diced

 

Instructions

  1. Blanch scallion in boiling water for 20-30 seconds
  2. Shock in ice water and strain
  3. Heat Ginger in grapeseed oil until ginger becomes tender
  4. Place scallion and ginger in food processor and puree.
  5. Add oil and allow to stand for 24 hours.
  6. Strain through cheese cloth.
  7. Bottle and Refrigerate.
